1 head cauliflower
Coconut oil, olive oil or parchment paper
2 eggs, slightly beaten
1/4 coconut or almond flour
at least 1/2 tsp. Italian seasoning (more if you like)

Preheat over to 425. Roughly chop cauliflower and steam it (stove top, microwave, steamer, whatever). I just put it in a pot with about 1 inch of water, cover and steam until soft. Either liberally oil your pan with the coconut or olive oil or line your pan with parchment paper. Once your cauliflower is cooked, chop it up in a food processor or mash with a hand potato masher…until it has a rice like consistency. Mix with the flour, eggs and seasonings. Spread the mixture out on your pan (round, square, doesn’t matter). Bake 17 minutes.
Add whatever toppings you like – chopped veggies, Italian sausage, chicken, ground beef, tomato sauce, fresh herbs, etc. Bake at 350 for 8-10 minutes to heat through.
**NOTE – this crust will also make a great bun or biscuit. You can spread the mixture thicker (or to your liking depending on the purpose) and cook a bit longer. Change up the seasonings to cinnamon or chipotle for a variety of uses!
