Thin Crispy Pizza Crust

Hormel Low Sodium Turkey Pepperoni
Sweet potato, peeled and sliced thin (mandolin preferred or a sharp knife will do)
1 egg, slightly beaten
Coconut or olive oil
Preheat oven to 400.  Heat oil in a pan and fry sweet potato in oil until edges are crispy.  Drain on a paper towel.  Lightly toss pepperoni slices and sweet potato chips in egg.  In a pie dish or on parchment paper alternate layering sweet potato chips and pepperoni slices.  Bake for 15 minutes or a bit longer if you like a crispier crust.
You may need to dab excess oil or change paper.  Top with your favorite pizza sauce and toppings.  Retrun to oven for 8-10 minutes to heat through.
